This manual process was engineered at the Hacienda San Alberto and each premium roasted coffee grain passes five selection processes. This guarantees an unbeatable taste, characteristic and consistent coffee.
Fruit harvesting in their optimal maturity point, followed by a water floating selection process.
Manual selection and discarding green, overmature and defective fruits.
Manual selection of the wet parchment to guarantee that only healthy and optimal almonds proceed to the drying process.
Almond selection according to weight, size, color and physical quality during the treshing process.
Selection by the cup test which guarantees that the batch which will be roasted be a loyal representative of the feature and attributes of San Alberto coffee.
